Taste Test Tuesday: Trader Joe's Black Bean & Cheese Taquitos
Black Bean Taquitos...not something my kids would normally get in line to try. But let me tell you, these were darn good. What impressed me on the label was that 4 taquitos (about what I would call a pretty reasonable serving as an entrèe) contained 7 grams of fiber. These taquitos seem pretty balanced with each serving having 12 grams of protein and 11 grams of fat to balance the 42 grams of carbohydrate.
I know the 11 grams of fat might be a bit higher than you expect from a bean-based taquito (32% calories from fat). But most of those grams are from mono and polyunsaturated fats with only 2 grams coming from saturated fat.
The first five ingredients are:
4 taquitos = 310 calories, 12 g protein, 42 g carbohydrate, 11 g fat, 2 g
saturated fat, 0 g trans fat, 10 mg cholesterol, 7 g fiber, 180 mg sodium.
Calories from fat: 32 percent.

This sounds like the first meal in a box that is ok for Diabetes 2 and Diastolic Congestive heart failure. Not bad on sodium and in my range of carbs.
It's very easy to make taquitos yourself to eliminate more fat. Zap corn tortillas for about 30 sec. in the microwave, then spray each side with olive or canola oil. Drain and rinse canned black beans (or use no fat refried) and mix in your additional veggies and seasonings. I like using the refried beans that are already seasoned with onion, garlic, peppers, etc. Roll filling in tortillas and secure with toothpick, then microwave (about 30 seconds for each taquito) or bake in a 400 degree oven for about 10 minutes. Don't forget the salsa!
Trader Joe's is a life saver for many of us busy people who want healthy food. I can vouch for the good taste of these taquitos
I heat my taquitos in the microwave, wrapped in a paper towel to absorb some of the oil.
It is good that you are advising against pan-frying, in favor of microwave. Pan-frying in open air, may oxidize fats and add to health problems. Actually, all commercially available fried foods may be regulated to be fried in the atmosphere of nitrogen gas and frying pans/containers should redesigned to allow a little of nitrogen gas atmosphere on top of the pan during the frying-process, as we normally handle lipids in the science labs.
