Frugal Friday: Don't Throw That Rice Away!

The Magee family does do the Chinese take-out thing from time to time and we always end up with a couple of small cartons of leftover rice. I usually ask for a carton each of white and brown rice since part of the clan refuses to go brown (I figure this is okay since they eat whole grain in every other situation). So guess which carton is sitting in the refrigerator almost completely full? The brown rice carton of course!

Rather than waste this wonderful source of whole grain, I have mastered a few teen-friendly ways to use it up the next day or so.

Ways To Use Leftover Rice From Chinese Take Out
  • Add to soups and stews during the last 15 minutes of cooking or warming up.

  • Turn a carton of rice into a bowl of fried rice by heating it in a nonstick wok or frying pan with a drizzle of canola oil, green onions, assorted vegetables and spices like chopped garlic and ginger, diced tofu or leftover meat like lean beef, skinless chicken or shrimp, strips of egg made with egg substitute, and some soy sauce.

  • Add 1/2 cup of cooked brown rice to your light frozen entrée that is in dire need of some additional calories, carbs, and fiber.

  • Use it as filler in mixed up dishes like casseroles

  • Add it to the filling of your favorite Mexican dish like burritos, tacos, enchiladas, or quesadillas.

You can freeze rice for later if you have too much to use up right away. To thaw, add just a little water and thaw it in the microwave or let it thaw at room temperature.

I always plan on meatloaf or meatballs the next day and use instead of breadcrumbs. Works great everytime.

We don't usually have leftover rice... we love it!

You could mix it in a breakfast "stir-fry" with onions, red peppers, mushrooms, cheese, eggs, and optionally, sausage.

Quickly saute' a couple of green onions and a few mushrooms in a little olive oil/canola. Add a pinch of whole cumin seed and a double pinch of crushed red pepper, a minced clove of garlic. When you can smell the garlic add a splash of worchestershire sauce and a couple splashs of tabasco. Any leftover cooked meat you may have, diced, is optional, and can go in now. Next, add a can of triple-rinsed/drained red or kidney beans, half a cup of water and a pinch of bullion powder. Bring to a quick boil, turn off heat. Add left over rice, stir well and cover for 2 minutes. Serve while still hot.

When my kids were little I used leftover rice in rice pudding. Made with leftover rice, milk, eggs, raisins, cinnamon, and a little sugar or honey it was nutrutious, satisfying, and they loved it. Great for breakfast, snaks, or before bed. And Easy!

My mom used to put marinara sauce over it...we called it red rice and added grated cheese. It was great!

To make it easy - just fry some leftover rice - white or brown and add sliced mushrooms - Voila - Mushroom rice.

I'm a Chinese, and when I was growing up, my mom made me finish every grain of rice in my bowl. She told me if I wasted any rice, I'll be poor and starved when I'm old... I sometimes cook more rice then I need just to make that perfect fried rice. Next time when you order fried rice from Chinese restaurants, you know its leftover rice you are about to eat...

My husband and I love rice and eggs for breakfast, which is, I understand, the Chinese way to use the leftovers...for breakfast.
We heat up a pan, spray with butter spray, add the rice (and, for us), Egg Beaters type eggs, finely chopped onions, blue cheese crumbles (yeah, I know, but he likes it that way and so do I), and the most important ingredient....Tone's Cajun Seasoning.
When I cook Basmati rice, he is there as it is getting done, with plate and spoon in hand and the cajun seasoning is already on the table. There's just something about Basmati rice, Tone's Cajun seasoning with a little pat of butter thrown in.
When he needs some comfort food, I start the rice cooker twenty minutes before he is supposed to be in the door. He works hard and he thinks this is better than making cinnamon buns for him.

FRIED RICE FROM CHINESE FOOD ISN'T WHOLE GRAIN. IT'S WHITE RICE FRIED WITH SOY SAUCE. SO, IT'S NO HEALTHIER AT ALL.

I put it in a bowl and add butter and hot red pepper flakes (the kind you put on pizza). I call it Bill's spicy rice. Yummy!!!

I'm replying to "anonymous 6:30" I can only hope most of us can tell the difference between brown rice and "browned rice". The real brown rice has a much heavier grain and is "huskier" than white rice covered in soy sauce.

I use rice all the time. Chop some onions, peppers rice and meat and your have a great, quick stir-fry meal.

I JUST HAVE A QUICK QUESTION
I WORK 6P-7A AS A NURSE SOMETIMES THINGS ARE SO HETIC THAT I DON'T GET A CHANCE TO EAT THEN I HAVE A FEW NIGHTS OFF AND I EAT AND SLEEP REG BUT THEN I SWITCH ALL OVER AGAIN, MY WEIGHT AS YOU PROB GUESSED DOESN'T MOVE EASY IT GOES BACK AND FORTH, WHEN I HAQVE A BUSY NIGHT I DON'T GET TO EAT TILL I'M DONE THEN I'M TOO HUNGRY AND TIRED SO IF I EAT I THEN GO RIGHT TO SLEEP OR I'M SO TIRED I JUST FALL ASLEEP AND DON'T WAKE UP TILL ALMOST TIME TO GO BACK SO AAGAIN I JUST WENT ALMOST 24 HRS WITH HARDLY ANYTHING
GOT ANY SUGGESTIONS?? I REALLY NEED TO TAKE OFF SOME WEIGHT I DID JOIN CURVES THAT HAS HELPED TONE EVERYTHING EXCEPT MY STOMACH GO FIGURE

Put it in a three quart casserole and add a couple of eggs, milk, butter and sugar (or Splenda). Mix it together and bake at 400° for 25 to 30 minutes. You can also add raisins, coconut, nutmeg, cinnamon, or anything else you might like.

put the left over rice together with some chopped onion,cilantro,ginger,one can drained tuna,one egg,some ground cumin salt and pepper to taste.Mix everything up thoroughly,form small balls and fry them up for a tasty after work,after school or any time snack........ENJOY.

This is for the nurse who works incredibly long hours: Try packing a variety of small, nutritious finger-food snacks in baggies to nibble on while you chart (I don't have to tell you to wash your hands before eating!). These can be 1/2 cup baby carrots, 1/4 cup almonds or walnuts, Weight Watchers makes a 50-calorie cheese stick, about 1/2 cup grapes. Make some protein, some vegetables or fruits and make sure they are easy to eat foods that you like. Have one of these every 2 to three hours. This will give you the energy you need and when you sit down to a meal, you may be able to eat smaller portion sizes that won't overwhelm your system (you store more as fat when you eat large meals). Try to keep meals at about 250-350 calories with the snacks making up the remainder of the calories you need. This may also help reduce the total number of calories you consume; with the exercise your metabolism should get a boost and you should be able to slim down--remember, it took a long time to develop that belly fat, give yourself time to lose it.

As far as the brown rice: try looking up a recipe for dirty rice, this browns the brown rice and no one will even realize that it is brown rice and the taste is delicious.--Jane, R.D.
