Taste Test Tuesday: Amy’s Tofu Scramble

Frozen organic tofu scramble with hash browns & veggies.

The picture on the box leaves a little to be desired (especially if you aren’t used to waking up to tofu)…but honestly (and surprisingly) I really enjoyed this frozen breakfast entrée. It had a nice aroma fresh from the microwave. It could come in handy when you don’t have time for breakfast in the morning or your stomach isn’t ready for breakfast first thing in the morning…so you need to bring something into work with you. This happens, right?

Also, it has a low amount of carbohydrates (19 grams minus the 4 grams of fiber equals 15 grams of net carbs), so it would be helpful for people with diabetes who are trying to stay within a lower amount of carbohydrates for their morning meal.

I do not have a fear of tofu so the words, “tofu scramble” don’t send me running in the other direction – but what did scare me was the price to be quite honest. So keep your eye out for any special deals with frozen entrees in general- and in particular the Amy’s line of products.

This breakfast was very satisfying and adds up to 320 calories. I’m thinking it was a while before hunger struck again due to the high amount of protein (19 grams), and total fat (19 grams), and fiber (4 grams). The first six ingredients are organic tofu, organic potatoes, organic tomatoes, organic onions, organic spinach, organic extra virgin olive oil…so most of the fat is coming from the tofu and the olive oil, which are “smart fats” in my book.

Would I buy this again? Absolutely…but when it’s on sale.
